What Happens When Coffee Is Roasted

When green coffee beans are roasted, a series of chemical reactions transform a raw, grassy bean into the aromatic, complex coffee we love. One of the most important byproducts of roasting is carbon dioxide — CO2.

Freshly roasted coffee is packed with CO2. This gas acts as a natural preservative, pushing out oxygen and slowing the staling process. That's why specialty coffee bags have a one-way valve — to let CO2 escape without letting oxygen in.

The Problem With Grocery Store Coffee

Most coffee on a grocery store shelf was roasted weeks or months before you buy it. By the time it reaches your cup, the CO2 has long since escaped, the volatile aromatic compounds that give coffee its complexity have degraded, and the oils that carry flavor have oxidized.

The result is flat, dull coffee. Not necessarily bad — just a shadow of what it could be.

The Peak Freshness Window

Coffee tastes best between 7 and 21 days after roasting:

Before 7 days — the coffee is still aggressively off-gassing CO2. It can taste sour or underdeveloped. Even fresh roasted coffee needs a few days to rest.

7 to 21 days — peak freshness. The CO2 has off-gassed enough for flavors to bloom properly during brewing while aromatic compounds are still vibrant and intact.

After 21 days — the coffee begins to stale. Still drinkable but the peak complexity is gone.

How to Keep Your Coffee Fresh

Store your coffee in an airtight container away from light and heat. Avoid the refrigerator — moisture and food odors will damage the beans. A cool, dark cabinet is perfect.

Buy smaller quantities more frequently. A 12oz or 1LB bag enjoyed within two weeks will always taste better than a 5LB bag that sits on your counter for months.
